14% by volume, Residual Sugar 3.6 g/l Total Acid 6.5 g/l pH 3.51 - VINIFICATION: Hand-picked at optimum ripens. Grapes are destemmed and hand sorted on a sorting table
making sure only the best berries are going to tank. Cold-soaking for 3-4 days at low temperatures.
Fermentation took place at 22 degrees with regular pump overs. First phase of fermentation is with natural
yeast there after inoculated with saccharomyces cerevisiae. After fermentation, the wine is left on the skins for
3 weeks before racked to barrel where malolactic fermentation takes place for up to 30days.
Color, Nose & Palate
- Arra Cabernet Sauvignon 2017 has an intriguing combination of dark fruit, sweet plum and layers of flavor
underpinned by earthy notes. The wine shows good length on the mid palate with tannins and oak
perfectly integrated with the structure, giving this wine a lavish mouth-feel that results with a lingering finish.
