- VINIFICATION & PRODUCTION: Grapes are specially selected for this range. Hand-picked at optimum ripeness, destemmed and hand sorted on a sorting table making sure only the best berries are going to tank. 20% of the juice are being drawn off to concentrate the juice-berry ratio. Cold soaking for 3-4 days at lowtemperatures. Fermentation took place at 22 degrees with regular pump overs.First phase of fermentation is with natural yeast there after inoculated with as specifically selected yeast, for cultivar specific characters. After fermentation, the wine is left on the skins for 4 weeks before racked to barrel where malolactic fermentation took place. After 12 months of ageing, the 3 cultivars was blended and went back into barrel for a further 8 months. Alcohol -14.0 % Residual Sugar -3.10 g/L Total Acid -6.20 g/L pH -3.52
Color, Nose & Palate
- Arra Accountant’s Blend is a deep maroon hue with a ruby rim. Bursts of plums and spice,Christmas cake notes of cinnamon and dark cherries. Violets, black olive,umami and tobacco hints carries through to the palate. Full bodied texturewith lingering tannins, finishing into a silky-smooth tipple.
